Guest Recipe: Homemade Caramel deLites/Samoas

Spoon Fork Bacon has done something absolutely genius: figured out the recipes for Girl Scout cookies.
They've been generous enough to share some of them with us (here's one for Thin Mints), and below we have one of our all-time favorites: Samoas.
These seem to have different names in different parts of the country, but they're good everywhere. Including in your own kitchen. Enjoy!
Homemade Caramel Delite Cookies
Makes 48
shortbread cookies:
3/4 cup (1 1/2 sticks) unsalted butter, softened
1/2 cup plus 2 tablespoons granulated sugar
1 teaspoon vanilla extract
1 3/4 cup all purpose flour
pinch salt
coconut-caramel topping:
1 cup light brown sugar, packed
1/2 cup heavy cream
1/4 cup (1/2 stick) unsalted butter, softened
1/4 teaspoon salt
2 ½-3 cups desiccated coconut
8 ounces semisweet chocolate, melted
