Guest Recipe: Homemade Thin Mints

There's absolutely no question that Girl Scout cookies are one of the great American treasures -- they will be in the museums of the future.
But they are a little pricey, and of late their ingredients have been called into question once or twice. Plus, not all varieties are available in all areas. So ... why not make your own?
The ladies behind Spoon Fork Bacon have figured out delicious homemade versions of three of the most popular Girl Scout cookies. Check their site for more varieties -- the recipe for the most popular, Thin Mints, is below!
Homemade Thin Mints
Makes 48
1 cup (2 sticks) unsalted butter, softened
1 cup powdered sugar
1 teaspoon pure mint extract
1/2 teaspoon pure vanilla extract (optional)
2/3 cup unsweetened cocoa powder
1 1/2 cups all-purpose flour, plus more for rolling
1/2 teaspoon kosher salt
8 ounces bittersweet or semisweet chocolate, melted
