Guest Recipe: Salted Caramel and Nutella Chocolate Chip Cookies

It makes sense that Sweden's cooks would excel in the baking arts. After all, they have to deal with some serious weather all winter long, the type of beautiful but freezing stuff that inspires people to stay home and cozy up. And chocolate does tend to make everything even cozier.

The food blog Louise's Spis has generously shared with us this recipe for salted caramel and nutella chocolate chip cookies. They're perfectly decadent: we think they could be a star on any cookie platter this month. Enjoy!

Salted Caramel and Nutella Chocolate Chip Cookies
Makes 16 cookies

½ cup butter
1½ cup light brown sugar
½ cup cocoa powder
2 eggs
1/4 tsp salt
3/4 tsp baking powder
2 cups all-purpose flour
100 g milk or dark chocolate chips
Maldon salt for sprinkling
about 8 tbsp Nutella and 5 tbsp salted caramel (recipe here)

Pre-heat oven to 350° and line two baking trays with parchment paper.

Melt the butter in a medium saucepan. Remove from heat and add the brown sugar and the eggs. Stir until smooth. Add the cocoa, salt, and baking powder, and stir until well combined. Sift the flour and add to the mixture and stir until there's no floury lumps left. Stir in the chocolate chips.

Take one heaped tbsp of dough and form a ball. Make 16 chocolate balls and place on the baking trays. Use your finger to make a large indentation in the centre of the dough. Fill the indentation with Nutella and salted caramel. Top with a flattened tbsp of dough and make sure to seal the edges.

Sprinkel with maldon salt and bake for 8-12 minutes.
