Grilled Brie Sandwiches with Arugula, Apple, and Honey

Grilled cheese sandwiches make terrific party food. You can assemble them ahead of time and cook them in a matter of minutes once your guests arrive. I like to cut mine into bite-sized triangles and serve them piping hot.

This recipe can easily be doubled or quadrupled, and there's no reason why you can't get creative with your grilled cheese and swap in other ingredients that you love.

Makes 1 sandwich

1 ounce brie
2 (½-inch-thick) slices country-style bread
¼ apple, cored and thinly sliced
1 - 2 teaspoons honey
Small handful of arugula
Butter, as needed

Spread the brie on one slice of the bread. Lay the apple across the brie like shingles on a roof. Drizzle the honey over the apple, then stack the arugula on top. Place the other slice of bread on top to make a sandwich. Butter both of the outward-facing sides of the sandwich from corner to corner so that the bread will toast evenly. (The sandwich can be assembled up to this point, wrapped in plastic, and refrigerated until you're ready to cook it).

Heat a heavy skillet over medium heat for a minute or two. Set the sandwich in the skillet and cook the first side for a few minutes, or until the bread is nicely toasted and crunchy. Flip and cook the second side for another couple of minutes. Slice and serve hot.
