Recipe: Soltero De Legumbres (Summer Bean Salad)
This light and colorful bean salad, courtesy of Los Balcones, is perfect to serve at an end of summer picnic or barbecue. Make it extra summery by using roasted corn on the cob from the grill. Enjoy!
Soltero De Legumbres
1/4 cup olive oil
1 1/2 Tablespoons rice wine vinegar
salt and pepper to taste
1/2 cup cooked new potatoes, chopped
1/2 cup fresh fava beans, cooked
1/2 cup canned cannelini beans, rinsed
6-8 Botija olives, pitted and chopped
1/4 cup cooked choclo (giant Peruvian corn), or fresh corn kernels
1/4 cup feta cheese, crumbled
1/8 cup fresh cilantro, for garnish
1/8 cup fresh Italian parsley, for garnish
For the dressing: Whisk by hand in a bowl and set aside until ready to use.
For the salad: Toss all ingredients together and garnish with the parsley and cilantro. Serve immediately.
