A Vegetarian (And Vegan) Thanksgiving Menu

Even though is seems like all vegetable dishes have bacon in them nowadays, a meat-free Thanksgiving is very easy to create. Below, we have hors d'oeuvres, mains, and side dishes that would make any vegetarian happy -- and a number of them are vegan, too! And then there are the desserts....

Hors d'Oeuvres
Sweet Pea Bruschetta: It's amazing how delicious some mashed-up, starchy veggies can taste. And they're a cool color!

Chestnut Hummus With Pita Chips: This is an especially excellent choice this year, as we're celebrating the rare, happy occurrence that is Thanksgivukkah. And every American loves dip. (vegan)

Main Dishes
Pumpkin Ravioli with Sage Brown Butter: If you make your own pasta, you've put in as much work as anyone making a turkey. And it tastes better.

Vegetable Lasagna: This lasagna is truly a thing of wonder. Seriously, even the omnivores will enjoy it. Especially if you use really good cheese.

Butternut Squash Galette: Vegetarian dishes can be hearty, as evidenced by this galette. It's about as easy as you'll find when it comes to baking, too.

Spaghetti Squash with Tomato Sauce and Shaved Walnuts: Unexpected and totally delicious, this one might take some explaining. But the flavors make it worth it. (vegan)

Side Dishes
Frisée, Radicchio, and Persimmon Salad with Dates and Walnuts: For those with a sweet tooth, this is the rare salad that appeals. It makes the most of the fruit that's still growing in California -- something we're all thankful for. (vegan)

Chile de Arbol- And Orange Glazed-Carrots: You should have something spicy on the table: if nothing else it'll shut up any old-school meat-eaters who think vegetarian food is bland. And again, this one has such pretty colors! I recommend going to a farmers' market for multi-colored carrots, too.

Butternut Squash, Brussels Sprouts, and Pearl Onions: All the Thanksgiving side dish basics, tossed together in one warm salad. (vegan)

Jalapeno Cornbread: Because vegetarians need comfort food, too. And something to sop up any sauces with. And cornbread is just about the best thing in the world.

Pomegrante and Pistachio Wild Rice Salad: Dishes that are called salad but don't have any greens in them are very cheeky. This one happens to be absolutely delicious as well. (vegan)

Szechwan Long Beans with Pink Peppercorn: This one can be made as spicy or as mild as you wish, and it adds some different flavor profiles (and fun color) to your table. (vegan)

Brussels Sprouts Salad: Simple and wholesome and filling and bright, bright green.
